Last Tuesday evening I made a few more freezer meals. I am loving the convenience of pulling a meal from the freezer for dinner and clean-up is a breeze. I still find myself missing actually cooking the meals some nights. I’m trying to work out a better balance where we have freezer meals a few nights and I cook some easy favorites a few nights too.
The last round of freezer meals was all about chicken, this time I used ground turkey. You could certainly use ground beef instead, actually most of the recipes call for ground beef anyway. You’ll see in the picture that I had to use round pans, they were out of the square pans but they would have worked much better.
Easy Lasagna (I omitted the mushrooms)
Enchiladas (I omitted the olives and added a can of chopped green chiles, a dash of paprika and cumin).

So what do you do? You make all of these meals one night and then just pull them out and reheat when you are ready to eat them? It looks like an awesome idea!

This looks like a great idea. I always intend to double recipes and freeze some and never do. I also forget to take things out of the freezer. Oops.
