The temperatures are finally starting to cool of a bit. Fitting because it’s almost October, right? And when I say cool down, I mean high 70’s/low 80’s. Crazy. You have no idea how badly I want to wear leggings and boats and fun fall plaids.
But you know what I can easily do? Indulge in some fall favorites in the kitchen. This year I’ve been reevaluating my relationship with food (you can see all my eats and fun recipes on Instagram) and it’s been a great process. I’m eating mostly Paleo now, which isn’t far from Whole 30 at all, so I think overall the Live Whole 365 agenda for 2016 has been such a success.
So I whipped up a batch of Paleo Pumpkin Muffins with a few (approved) chocolate chips in the mix and they were a hit. Judson (he’s 2) and he’s been eating them and calling them brownies, that’s a win any day!
Y’all! These are the perfect healthy fix for fall pumpkin obsessions and I’m so excited for you to try them! I think we’ll be making these all season long! And did I mention they are easy? Even better, right?
They’re perfect for mornings or a sweet fall treat during the day. This batch made 12 regular sized muffins, but I think they would be fun and delicious cooked in a mini-muffin pan, too.
- 1½ cups of pumpkin
- 3 eggs
- ¼ cup plus 1 tablespoon of maple syrup
- ¼ cup coconut oil (melted)
- 2 cups super-fine almond flour
- 1 tsp baking soda
- 1.5 tsp pumpkin pie spice
- 1.5 tsp cinnamon
- ¼ c chocolate chips
- ¼ tsp sea salt
- Preheat oven to 350
- In a mixer, mix together pumpkin, vanilla, maple syrup, eggs, and coconut oil.
- While still mixing, slowly add in the almond flour, sea salt, and baking soda, cinnamon and pumpkin pie spice.
- When everything is mixed together, fold in the chocolate chips.
- Pour into a greased muffin pan and bake for 30-35 minutes, or until center is set.
But what about if you don’t love Paleo recipes and you want something full of delicious indulgences and stuffed with cream cheese? I have good news for you! I shared these awhile back and they were a huge hit, you can even bake this recipe in a loaf pan for a great pumpkin bread.
