I love a good bowl of warm oatmeal in the morning. It’s filling, healthy and tasty and it became my go-to breakfast years ago. But people would tell me or I would read in fitness magazines about oatmeal being this super breakfast food. Basically, something that would hold you over until lunch without feeling the need to snack.
Let’s be honest, that just wasn’t the case for me.
And then I read that I should be using steel-cut oats instead of instant or quick-oats.
Well.
I bought a container of the steel-cut oats and noticed they had to be cooked for a while and it didn’t have a microwave option. So I went with plan B and put them in the crock-pot overnight.
That made the cooking part simple. Problem solved.
And it just requires a few ingredients. Even better.
Overnight Oatmeal
- 1 cup steel cut oats
- 4 cups water
- 1/2 cup half-and-half
- a pinch of salt
- diced apple (I diced two fresh apples)
Mix all ingredients together in the crock-pot and cook on low heat for 8-9 hours. If you have a crock-pot that cooks faster than normal you may need to check on it or add water at the half-way point.
I ended up with a ton of oatmeal so I put it in individual containers and we all had breakfast for several days. Luckily, this is one of the things BK will actually eat so it makes a fun toddler breakfast especially if you give her the right toppings.
Of course, I added a little butter, brown sugar and walnuts to the top of mine but the possibilities are endless. And how perfect would a big crock-pot full of this be for brunch with a toppings bar? Fresh fruit, dried fruit, mixed nuts, Greek yogurt, maple syrup, granola, cinnamon-sugar, I think you get the picture.

This is an awesome idea. I loved “real” oatmeal(with brown sugar :-)…but it takes too long to cook in the AM.
I also LOVE my crock pot….Count me in ๐

I have never used steel cut oats but I tried a baked oatmeal with them last week. Such a huge difference!

I agree! I eat oatmeal every morning, and I’m still hungry 2 hours later. I started eating mine with a big spoonful of peanut butter mixed in with bananas and strawberries a few years ago. It does hold me over longer with the protein. I may try this one!
