Toddler Tuesday is back and better than ever, or so I hope!

Toddler Tuesday started as a way to post toddler activities but really there is so much more when it comes to toddlerhood. So I’m declaring Toddler Tuesday, all things toddler. What great recipe have you discovered that your toddler loves to eat? Have they helped in the kitchen? And of course, any of those fabulous learning or just plain fun activities you do with your wee one at home.
This week’s Toddler Tuesday post is about my absolute favorite author, Dr. Seuss. His books are near and dear to my heart and I’ve read BK Oh, The Places You’ll Go more times than I can count. We’ve worked hard to complete her collection of Seuss books over the past two years and I hope she loves his whimsical style and huge imagination as much as I did as a child (and still do as an adult).
Another favorite of mine is the classic, Green Eggs and Ham. So, on Thursday night with BK perched atop the kitchen counter we made our own version of green eggs and ham. I won’t lie, it was definitely more me doing the work and her eating chocolate chips. But hey, she was entertained for a little while.
It wasn’t quite as easy as I had anticipated to stack the chocolate chips. I ended up just melting a few in a bowl and using the melted chocolate to help them stay together. I then put them in the oven on about 170 degrees for just a few minutes. When they came out they were soft and slightly melted, at that point I pressed a green M&M into the center of each one.
Then into the fridge for a little while, just long enough for the chocolate to harden.
And then on Saturday morning we delved into the real stuff. Allen read the book to BK while I made us green eggs and ham (and cheese) omelets.

Y’all are so creative! And involved! I never knew Dr. Seuss’s birthday was such a big deal till this year, having my own toddler. And I grew up reading stacks and stacks of his books. BUT, I’ll definitely do this for next year!!!!!
