It just so happened that we ended up at the beach in the middle of a crab Jubilee. I had no idea what was going on as Allen and I walked on the beach one morning and noticed an insane amount of blue crabs the lined the water close to the shore. We stopped and talked to a local man who was busy catching crabs in the water. He told us that the crabs didn’t normally come this close to the bank, only in the case of a Jubilee. After a little research it was determined that a jubilee occurs sporadically and without much explanation. In the case of a Jubilee, the sea life comes close to the shore or in some cases onto the shore.
There were many people out catching the crabs and Allen and my dad wanted in on the fun.
Jubilee Crab Dip
2- 8 oz. blocks of cream cheese, softened
1 1/2 c shredded Monteray Jack cheese (get the block and shred it, trust me)
1 green onion, finely chopped
1 1/2 tsp jalepeno, finely chopped
1 3/4 tsp garlic
2 tsp lemon juice
8-10 oz. lump crab meat
Mix all ingredients together, reserving 1/2 c of Monterray Jack cheese for topping.
Spread evenly into an oven safe dish.
Bake for 25-30 minutes (until cheese has browned on edges) at 350 degrees.
Serve with chips, crackers or toasted bread.
