I’m going to make the What’s For Dinner? post a weekly post. It really motivates me to cook up some yummy WW recipes. This week I cooked something that was so good. Allen asked me “Are you sure this is WW?” ๐
Prosciutto Chicken Bundles

20 oz Chicken, breast, raw, without skin & bone, 4 (5 ounce) halves | |
2 oz Part-Skim Mozzarella Cheese (4 1/4″ thick slices) 12 leaves basil, fresh 1/4 tsp black pepper 4 oz prosciutto (8 thin slices) |

- Preheat the oven to 400°F.
- Make a pocket in the side of each chicken breast by inserting a sharp paring knife into the thickest part, then gently cutting back and forth until a small chamber has opened in the side. Do not cut through to the back or the sides of the breasts. Enlarge the pockets gently with your fingers. Stuff each pocket with 1 slice cheese and 3 basil leaves. Sprinkle the chicken with the pepper and wrap 2 slices prosciutto around each stuffed chicken breast half.
- Heat the oil in a large ovenproof skillet over medium-high heat. Add the chicken and cook until lightly browned, about 3 minutes on each side. Transfer the chicken in the skillet to the oven and bake until cooked through, 1215 minutes. Yields 1 piece of chicken per serving.
