I haven’t been great about doing weekly weight watchers post. The weight continues to come off (not as fast as in the beginning), I’ll try to do a catch-up post with that next week and maybe update monthly rather than weekly.
One positive thing about Weight Watchers is that we’ve pretty much overhauled our way of eating around here. It’s easy to find things for dinner that are WW friendly because we have lots of healthy fruits and vegetables, lean proteins, and whole grains on hand.
Last night, we had chicken and cheese quesadilla’s and they came in at about 6 WW points each. We also had Spanish Rice made with brown rice and black beans. It was a great dinner that fell right where I needed it to in the points department.
The great thing about this is you can prep the chicken beforehand. I prepped it during nap time, so we only had to assemble and cook the quesadillas before dinner. It made my job quick and easy.
- 3 boneless, skinless chicken breasts
- ½ c. roasted verde salsa
- 1 package taco seasoning (or you make your own)
- juice from 1 lime
- 1 cup chicken broth
- shredded cheese
- whole wheat tortillas
- optional toppings
- sour cream
- salsa
- jalapenos
- cilantro
- Boil chicken in chicken broth, ½ cup of water and taco seasoning.
- When chicken has finished cooking, shred with a fork (or put it in your Kitchen-Aide mixer with the paddle attachment).
- In a large bowl add chicken, ½ cup reserved broth (or more or less to suit your taste), lime juice, salsa verde, salt and pepper (to taste) and mix well.
- We use a quesadilla maker for the final step, but you can make them on your stove top, too.
- Just heat a little oil in the bottom of a large skillet. Lay one flour tortilla in the bottom of the skillet, top with shredded chicken mixture and cheese. When cheese is bubbly and the bottom of the tortilla has browned, fold in half.

These look great….and easy! I’m still in the beginning of my pregnancy (16 weeks) but I plan on using Weight Watchers to get the baby weight off (if I need it) so I would love to follow updates, whether they are weekly or monthly.

I make a variation of this. I cook the chicken in the crock pot with taco seasoning, rotel or salsa. It is so easy to shred. Then I freeze it for meals. So easy. Thaw it out in refrig at night, it is ready for supper next day. I reduce ww points using 2% cheese ans fat free sour cream. YUMMY! One of my favorite meals. I have followed off the ww wagon. Your post are helping me get back on!

I made a variation of these for dinner on Monday night and had leftovers for lunch yesterday. SUPER good :). I dished out homemade pico de gallo on top and as Sophie likes to say, it was “Tee-lish!”.
