Full disclosure, I made these last year. You know, when I wasn't trying to lose the rest of the baby weight. I thought I'd share them and live vicariously through those of you who want to have something sweet for St. Patricks's Day. I love a good excuse to make fun and festive holiday treats. I'm a planner through and through, it helps us stay on track as a family, it's what makes our life a little easier most days. The only problem with planning is that it takes time. Chicken salad is one of those things I instantly crave at the first sign of summer weather. My eating habits are fueled by the weather, it's summer now and the temperatures are hovering around 90 degrees on a daily basis, I want things that are cool and refreshing. Chicken salad is one of my summer time favorites, but I have to admit, I tend to be picky about my chicken salad. For starters, onions are a deal breaker, without exception.
