With one of my favorite times of the year just right around the corner, I can't help but dream of pumpkin and boots and all things fall. But, I'm quickly awakened when I walk outside and the humidity hits me right in the face, and I realize that the temperatures aren't falling just yet. I'm trying to reason with myself and convince myself that it's okay to have pumpkin pie when it's still ninety degrees outside. Because it is, right? Freezer Meals
I'm linking up with Kelly for Show Us Your Life, and it's all about Freezer Meals today. When I started teaching again, I used freezer meals to shave off some prep time when it came to dinner each night. I've actually made batches of meals to freeze. Cilantro-Lime Rice Burrito Bowls
I'm a huge burrito bowl fan, and by that I mean, I like to take the easy route. Who doesn't love a dish with minimal prep time, one you just layer in a bowl and call dinner? I've even been known to cook extra on Taco Night to have leftovers for burrito bowls. Actually, we don't technically have a taco night, but I feel like we should probably start one. Like tonight. The best part about this dish is that you can make it extremely healthy. Even my picky toddler loves a deconstructed version of the burrito bowl.
