Slow-Cooker Potato Soup1 bag frozen hashbrowns32 oz chicken broth2 cloves of garlic, minced2 tablespoons dehydrated onion flakessalt and pepper to taste2 cups sharp cheddar cheese1 c half and half or heavy cream3 tablespoons of all purpose flourbacon, cheese and sour cream for toppingPlace first 6 ingredients in crock pot and cook on high for 4 hours. Guacamole, my way
I'm slightly crazy when it comes to guacamole. I love the stuff, but I don't usually like the kind in Mexican restaurants. Well, except for the two places who made the guac at my table and I was able to go sans red onions. Now those were great. But really, I just resort to making it at home most of the time. Slow-Cooker Verde Pork Enchiladas
There is a little restaurant that I adore within the Gaylord Opryland hotel in Nashville. Allen and I had dinner there last year when we went to Nashville for a short Valentine's getaway and after that we literally only wanted to eat there the rest of our weekend. Now, you know I'm a sucker for Mexican cuisine as it is, so of course, I ate there twice during Blissdom. The second time I tried their enchiladas and they were amazing!
