I’m sure you’ve noticed (or maybe you haven’t, which is all the better) that I haven’t had a weigh-in Sunday in a few weeks. We’ve been eating out a good bit in order to make sure our house is ready for showings or for the agent to come over. It was just easier to eat out rather than making a mess that would have to be cleaned up quickly. Then, there was Lauren’s wedding and I’ve been busy with Braylabee’s… I’m just full of excuses. Whatever the case I hoped on the scales Monday morning and I was definitely taken aback. I’ll explain it all on Monday in the WW Monday post.
I said all of that to say we’ve been making better choices and cooking healthier for dinner. I’ve tried two recipes this week and they’ve both been a huge hit at my house…
First up, Buffalo Chicken Lettuce Wraps. Yum. I linked it back to the blog it was posted on, you can read the original post there and you’ll probably stay awhile because she has a fabulous blog!
These were so good. I just put the chicken and buffalo sauce and a little I Can’t Believe It’s Not Butter in the crockpot and let it cook on low all day. When it was time for dinner I shredded the chicken, added a little extra buffalo sauce for good measure and mixed it all together. We drizzled ranch dressing on top and seriously devoured them. It’s quick and easy and will become a go-to recipe at our house!
Last night, we had crock-pot Salsa Chicken. No particular trend with crock-pots, just how it ended up. I found the recipe on WW online and tweaked for our liking. Meaning that the original recipe called for onions and bell peppers and your girl always omits those from a recipe. Always.
