I have three recipes for you this week… looks like someones been spending some time in the kitchen π
Turkey Taco Lettuce Wraps
WW points: 5 (I used fat free cheese and sour cream, points may vary based on toppings)

Ingredients:
- 1.3 lbs 99% lean ground turkey
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp oregano
- 1 tbsp minced onion (I used the dried onion from the spice aisle)
- 3/4 cup water
- Pinto Beans
- 8 large lettuce leaves from Iceberg lettuce
- Salsa, cheese, sour cream, tomoatoes (optional toppings)
Directions:
Brown turkey in skillet add spices and water and bring to a boil. Reduce heat and simmer for 5 minutes.
Place turkey in lettuce and top with desired ingredients. I topped mine with tomatoes, fat-free sour cream, fat-free shredded cheese, pinto beans, tomatoes and salsa.
- 2 (9 oz) packages refrigerated cheese tortellini
- 1/2 c olive oil
- 1/2 c freshly grated parmesan cheese
- 3 tbsp fresh lemon juice
- 2 garlic cloves
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 2 c baby heirloom tomatoes, halved
- 1 c fresh corn kernels
- 1/2 c coarsely chopped fresh basil
- salt and pepper to taste
Directions:
Prepare tortellini according to package directions.
While tortellini is cooking, process olive oil and next 5 ingredients in blender until smooth. Toss olive oil with hot cooked tortellini, tomatoes and next 3 ingredients. Season with salt and pepper to taste.
Note: The original recipe called for sliced green onions- I omitted these π
I also made Buffalo Chicken Wraps. It’s buffalo chicken in an egg roll wrapper with broccoli slaw and cheese. The original recipe called for bleu cheese but my husband detest bleu cheese so I used part skim mozzarella. Here is the link to the recipe. I think you’ll find this helpful because it includes step-by-step directions.
