When Jennifer asked me to guest post for her, I was flattered. She is so funny, gorgeous, and inspiring! Seriously, if you don’t read her blog, you must. It’s one of my daily reads, for sure. I thought and thought about what I wanted to blog about and finally decided on sharing one of my very favorite dips with you guys. After all, ’tis football season and here in the South, dips are very important on game day!
My most favorite spinach dip of all time is one that my best friend Kelly shared with me (scroll down to the bottom of the post). It’s my go-to dip to take to any party or get together; the simpleness and tastiness of that dip NEVER disappoint! But sometimes, I like to live on the edge. You know, let my hair down a little. And nothing says living on the edge like adding artichokes to spinach dip! I know. I’m so risky, sometimes I frighten even myself. Hope you enjoy!
Spinach Artichoke Dip
Recipe via Mel’s Kitchen Cafe
Ingredients:
1 1/2 cups whipping cream
2 tablespoons flour
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces cream cheese, light or regular, softened
16 ounces frozen, chopped spinach, defrosted and squeezed dry
2 (15-ounce) cans artichoke hearts, drained
1 teaspoon hot sauce
1 cup freshly grated Parmesan cheese
1 cup freshly grated mozzarella cheese
Directions:
1. Preheat the oven to 350 degrees. Lightly grease a 9X13-inch or similar sized baking dish.
2. In a large microwave-safe bowl, whisk together the cream, flour, garlic powder, salt and pepper. Microwave the mixture in 1-minute intervals, whisking fully after each minute, until the mixture is thickened, about 4-5 minutes.
3. Stir in the remaining ingredients until well combined. Spread the dip into the prepared pan. Bake for 25-30 minutes until bubbling and golden on top. Serve warm with bread or tortilla chips.
