I thought long and hard about what I wanted to blog about. I kept going back to fall. Don’t you just love fall? It is by far my favorite time of year. Don’t get me wrong I love summertime and sunshine but when the temperature is hovering around 100 degrees every. single. day. I feel compelled to be at the beach. And well, since we don’t live at the beach I can only take those sweltering temperatures so long. I’ve been day dreaming about all things fall pumpkin patches, apple cider, Salted Caramel Mochas, boots and scarves and while we aren’t quite in fall temps yet, I’ve ready to start partaking in all of those things. Something about fall just screams cozy and makes me want to curl up under a blanket and sip hot chocolate and eat something pumpkin flavored.
In fact, just the other night I was craving something pumpkin. I consulted one of my favorite websites for recipes, Skinny Taste, and found these Pumpkin Spiced Oatmeal Pecan Cookies. I knew I had to make them. They were quick, easy and didn’t disappoint.
Pumpkin Spiced Oatmeal Pecan Cookies
Ingredients:
- 1 cup all purpose flour
- 2 cups quick oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 2 tsp pumpkin pie spice
- 2 tbsp unsalted butter, room temperature
- 1/2 cup sugar
- 1/2 cup unpacked brown sugar
- 1 large egg
- 6 tbsp canned pumpkin (not pumpkin pie filling)
- 2 tsp vanilla extract
- 3/4 cup chopped pecans
- ****I added 1/2c white chocolate chips ๐
Directions:
Preheat oven to 350°; line two baking sheets with parchment paper or use a silpat.
In a medium bowl, whisk together flour, oats, baking powder, baking soda, salt, pumpkin spice and cinnamon. In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.

Those cookies look delicious!! I’m doing Weight Watchers and use the Skinnytaste website for recipes all the time!! Everything that I’ve made has been great, but my favorite is her Barbacoa Pork and Cilantro Lime Rice. Try it sometime, you won’t regret it:)

Yum! I actually just pulled out from the oven a tray of very similar cookies! Mine are puppkin oatmeal raisin..so yummy! Love, love love pumpkin food ๐
