I started “bulk cooking” to get myself in the habit of eating healthier meals at lunchtime.
I’m always searching for little things I can do to keep my on track throughout the week. I find that breakfast is incredibly easy. There are tons and tons of healthy options for breakfast. But lunch? That is a completely different story.
This is what a few days of meals look like after they’ve been prepped.
It’s so simple to create a few meals like the ones pictured above. I just cooked two different proteins to give myself a little variety. This time I chose chicken and turkey burgers. While they were cooking I baked a few sweet potatoes and cut them in half to add to the meals. I also steamed green beans, broccoli, cauliflower and carrots in the microwave. And I made brown rice to alternate the carbs.
Each meal has a protein (turkey or chicken), carb (brown rice or 1/2 sweet potato) and vegetable (green beans, broccoli, cauliflower and carrots).
The meals are fully prepared and just need to be heated. Such a simple concept that saves me a ton of calories each week.

You can invite friends and take daily challenges relating to health and nutrition. I would definitely recommend checking it our here. The sweet people at GE sent us this healthy snack tray. It was nice to have healthy options when I was in the mood to snack or needed a boost of energy.

You inspired me! I go in and out of paleo;). I find it’s difficult to enjoy cooking for your family and eat strict paleo every meal. This is a great way to stay on track for most of the day! Do you have a recipe for the turkey burgers?

We do this, too! As much as I hate cooking 12 chicken breasts and chopping up and insane amount of veggies on Sunday afternoons, it helps me stay on track… Says the girl who’s eating a biscuit and drinking a DP this morning for breakfast ;).
