I didn’t take pictures of food this week but I still plan on giving you meal plan for the week. Hopefully, I’ll get that documented this week. I wanted to share a few yummy things with you that I did eat this week.
First up, buffalo chicken lettuce wraps. I posted this a while back and I told you that I made homemade Ranch dressing to put on the lettuce wraps. I just left the dressing off to make it Paleo friendly, used Gluten Free buffalo sauce and shredded chicken. I just cook the chicken with the buffalo sauce in the crock pot on low for a few hours, put it in the stand mixer for a few minutes to shred the chicken and put it into lettuce.
I also made the Paleo Pumpkin Muffins. I was surprised that the consistency was very similar to a real muffin but I felt like the flavor was a little off. I’m trying them again tonight so I’ll have an updated recipe for you sometime soon.
