Yesterday, on Instagram, mentioned that we had been eating whole to the tune of 111 days. Is that crazy or what? I’m thinking yes. My eating is so far from where it was in 2015 and each day gets easier as it becomes our normal way to eat. I’ve ramped up my exercise and I even plan on trying out our local Crossfit gym. See, I told you, so far from where I was last year and it feels really good to be making progress in the right direction.
Today, I thought I would give you a round up of some of my go-to recipes for Whole 30 dinners. These stay on heavy rotation at our house and I promise they are so quick and easy. They will make weeknight dinner time happen, even for the busiest of families.
ONE- Plantain Nachos — We have approximately 27 different versions of this recipe, but those plantains make the perfect substitute for chips and gives me the crunch I need when I’m craving tacos.
TWO- (topped with roasted broccolini) Can I just say that roasted broccolini makes the dish happen. I was in a rut a few weeks ago when we cooked this recipe and it snapped me back to reality. I LOVE that you can cook one big pork tenderloin and use it later in the week. Cook once and eat twice might be my favorite!
THREE: New Orleans Style “Barbeque” Shrimp — I realize the picture above might not do it justice, but this dish is a definite favorite. I don’t have a real recipe for it, but here’s what I do: Coconut oil, couple cloves of minced garlic, slice one lemon, squeeze in another, add Cajun seasoning and hot sauce to your liking (gimme all the spice), shake or two of coconut aminos, salt, pepper, and peeled and deveined shrimp. Cook at 400 until shrimp are pink. Bonus points if you let your shrimp marinade in the mixture prior to cooking.
FOUR: One Pan Chicken Fajitas — Just sliced bell pepper, chicken, and onions generously seasoned with homemade taco seasoning. In the oven at 350, I leave mine in for a while so the peppers and onions get nice and brown!
FIVE: Barbecue Sweet Potato Fries — Cook this on the same week you cook your Cider Pork tenderloin. It’s fool proof, for sure. Toss the remaining pork in Tessemae’s (or some other complaint) barbeque sauce and serve over perfectly roasted sweet potato fries.
