I did a Instagram story series a couple of weeks ago on this soup and it’s definitely become the most requested recipe. The problem with Insta-stories is they disappear in 24 hours, but since it got so much traction, I thought I would put it here on my blog, so we’ll have it forever.
Or for as long as I pay my domain registration fee.
I can’t take credit, it belongs to my sweet friend, Fran. She got me hooked on it and I’ve probably made it about a dozen times since. I know I throw around the word favorite but this is truly a favorite in our house. Everyone eats it, and it always gives us leftovers, and it’s even better the next day.
And while I have your attention, let’s talk about Whole30 September for a second. Are you hanging in there? I’m feeling tired, I’ve only made it to two workouts this week, and I’ve even been getting to bed on time. I’ll tell you a little secret, I gave up Netflix for this round of Whole 30, like a Whole 30+, I basically have so much extra time on my hands. I may never know what happens at the end of Weeds, but I do have all my laundry done.
Anyway, let’s get to that recipe.
- 1 rotisserie chicken, pulled
- 1 package Pederson Farms W30 approved sausage. sliced and browned in a skillet
- 2 medium sweet potatoes, peeled and diced
- 5 oz package fresh spinach
- 28 ounce can fire roasted diced tomatoes
- 2 bell peppers any color diced
- 1 small onion, diced
- 4 cups chicken broth
- 2 cloves of garlic, pressed
- Franks hot sauce to taste (a good 8-10 shakes)
- Salt, if desired
- Start by browning onions, peppers, and garlic (just put 2 small cloves through a garlic press) in a large pot or dutch oven. Cook until tender.
- Add all other ingredients and cook until sweet potatoes are fork tender.

Gah. I’m gonna have to change up my meal plan to fit this in somewhere. So delicious.
p.s. I finished up Downton on Wednesday (because, sick day), but maybe I’ll ditch Netflix for the rest of the month. Can we promise to have a marathon in October?! 😉
