I can’t believe it’s the end of the month! My mom started Whole 30 with me on Monday, seriously it only took me 2.5 years to convince her that it’s legit. And spoiler alert: she’s already feeling better and sleeping better after just a week. Whole 30 is the real deal, and I can’t say enough about how it has changed my life and the way I view food and eating.
Like many people starting the Whole 30, my mom was overwhelmed by the program. Y’all, I’m not kidding when I say, I took it 2-3 days at time during my first Whole 30. It was super overwhelming and I was essentially cutting out all things that were normal to us.
Since I have a really good grip on the program rules and a arsenal of insanely delicious recipes, I thought batch cooking for us would be a great start. Last Saturday evening, I spent exactly three hours in the kitchen and had 4 amazing recipes for the week.
My mother in law joined us on Friday night and we cooked another round of recipes to get us through another week. Batch cooking doesn’t mean I don’t cook during the week, but it ensures I have breakfast on busy mornings and a lunch ready to grab and take to the office in the mornings. I usually cook something I can use as an entree and then during the week I only need to roast the veggies. It seriously makes things so much easier, and doing a million dishes at once isn’t ideal, but at least I cut down drastically on the dishes I do throughout the week!
Of course, the Fiesta Breakfast Casserole made the cut. I’ve made this casserole at least a dozen times and it never, ever disapoints!

January is over in just a couple of days, but I’ll be continuing on through the first few weeks of February, until our Disney trip!
