I’m starting a new series this week on the blog and it’s all about meal prep. It won’t necessarily be Whole 30 or Paleo every week, but it will be clean and quick and easy.
Back before we went to Disney World, I went full-time at work (maybe that helps explain by blog absence). Even though I don’t work traditional office hours, it still makes for a super busy week. I’ve found that when I don’t have a plan for the week, I end up eating out and I don’t always make the best choices.
This week, we’re starting with one of my favorite go-to lunches, buffalo chicken salads. I’ll be using these containers for the meals and
There is something so refreshing about a salad, especially during the summer!
These little bowls pack all of the flavor of buffalo chicken. Little known fact, chicken wings are a huge guilty pleasure for me and this gives me a little fix while still keeping me on track.
Did I mention these require zero cooking? At the end of the prep, you’ll have 4 lunches and no dishes to wash. You can’t even really call this one a recipe, but this combination of ingredients just needs to be shared!
Here’s all you need:
- 1 rotisserie chicken
- 1 cup shredded carrots
- 4 cups baby spinach leaves
- 2 stalks of celery
- 1/4 c chopped walnuts
- buffalo sauce (I love Tessemae’s)
- Primal Kitchens ranch
To assemble the bowls, divide all ingredients evenly between the bowls. This particular batch will make 4 bowls. I don’t love to meal prep longer than 3-4 days out, so these quick meal prep bowls make it easy to do a little meal prep twice each week.
I use the buffalo sauce as the main “dressing” and drizzle a little Primal kitchens Paleo ranch over the buffalo sauce.

I wish I was better at prepping meals. It would make lunchtime that much easier. Though I’m not even sure if that would help on some days where Mason just isn’t having any of it and I’m not getting lunch till 3pm.
